My pizza chicken is the perfect alternative.
1 free range chicken breast, cut in half to make it thinner (so it’s a half thickness breast)
Tomato pizza sauce
Grated cheese (I use a combination of mozzarella, cheddar and Parmesan)
Salt and pepper
Here are a few ideas. Each of these does one “pizza”, but let your imagination go…
Feta and spinach (my favourite)
1 small bag/single serving of baby spinach
100g of goats milk feta (dodoni is good)
2 tablespoons toasted pinenuts
Ham and pineapple (husband’s favourite)
100g of good quality free range ham
2 pineapple rings (from the can)
Mexican (my mum’s favourite)
2 slices of hot salami
a few jalapenos from the jar
2 tablespoons cooked red kidney beans
Season the chicken breasts with salt and pepper. In a fry pan, heat some butter and brown off the chicken. Place the chicken in an oven proof dish, spread with tomato pizza sauce (or pesto or bbq sauce) and top with desired toppings (see above for ideas). Sprinkle with grated cheese and put into a 190deg oven until the cheese is golden and bubbling.
Serve with green salad or steamed broccoli (because I love broccoli).
