Sunday is market day, so after an organic royal gala apple, we headed off and I had a coconut and half a mango coconut milk icy pole (Jacob ate the rest after he took this photo).
Then we went off to litchfield on a road trip. I had packed a little bag with fruit and other such healthy snacks, but in the mad rush of swapping cars, I left them at my mum’s house. So we were stuck with water, nuts and chips. I don’t usually like potato chips so I only ate about 2 small handfuls, and there are only so many nuts a girl can eat, so I only had a small amount of nuts too. When we came back home, we had the cheesecake I made. I use the word “cheesecake” loosely, because it doesn’t really taste like a cheesecake, but it is seriously tasty. I used this recipe and added cacoa, but found that 2 lemons was WAY too much, so I had to add a few small banana’s in to balance the taste. I will try this again though.
I did freeze it for a little too long, but this resulted in the most yummy ice cream like consistency. And I did have a little left over, so I mixed the base and filling together with some seeds, covered it in coconut and made a little yummy treat.
Dinner was supposed to be laksa, but the place was closed, so I decided that I would make my own the next day (read day 15 for more details). Instead we went to a seafood restaurant on the wharf, where my mother-in-law and I shared an entree of crocodile, a seafood platter for one and a watermelon mocktail. I am not fond of crumbing, so I picked all mine off.
